Derived from Amharic language, Biftu Gudina means "ray of development." The cooperative was established in 2012, and is located in the Agaro - Goma woreda (district) within the Jimma zone. There are about 150 smallholders in total. Located near Jimma town, the co-op benefits from high altitude and rich fertile soils. The surrounding area is green and lush.

The coffee at Biftu Gudina is processed using the washed method. At the washing station, cherries are sorted by hand for unripe and over-ripe fruit prior to entering the hopper that feeds the Penagos eco-pulper. Afterwards the beans are soaked in clean water in concrete tanks for 8 hours. Waste water treatment relies on a natural form of filtration through a vetiver grass plot before it goes into the pits and finally the ground. The beans are then sun dried for 10 to 14 days on raised African drying beds and carefully hand sorted again.

Biftu Gudina has a strong leadership and chairman who together with Technoserve (an NGO that supports farmers in setting up washing stations and new cooperative structures) established the cooperative. Initial funding came from Falcon Coffees. Since Biftu Gudina was established it has become famous in specialty coffee circles thanks to its incredibly complex and luscious flavour and consequently it now commands prices that farmers could only have dreamt of in the past - as much as four times more.

Always one of the most eagerly anticipated arrivals of the season, the 2017 Biftu Gudina is as delicious as ever. In the cup, expect intense jasmine and magnolia florals, notes of apricot, lime and hops and a complex honey sweetness.

The roaster

Cocora is a speciality coffee roaster in Malaga, Spain. All of Cocora's beans are:

  • Seasonal
  • Fully traceable all the way to the origin
  • Superior quality according to high SCA standards

Cocora’s roasting approach opens up the full potential of the bean by accentuating the unique taste profile for each coffee.

The Goodery coffee is absolutely incredible. The beans have obviously had a lot of love and care put into the roasting, the picking and the delivery. Josh really cares about his coffee, and his customers and wants to ensure that they are seeing the bigger picture behind what they are drinking. The fact that the coffee is sustainable, zero-emissions, packaged beautifully and easily one of the tastiest around as well as being carefully curated each month, makes it all the better. Not only does it smell great, taste delicious, it looks damn cool on your kitchen work-top.

There’s something profound that happens when you get the right bean, at the right grind size, with the right temperature water and the right dose. It’s like magic.

I've enjoyed making a ritual out of it and my son loves the whole process. I can’t wait to share this joy with more people and invite others into this dance of soil, people and bean.

Choose your grind

We recommend grinding at home, just before you brew for freshness, but we can also grind the way you like it according to your method of brewing, from a fine 'stove-top' grind to a coarse french press grind and anything in between.
